Red Chilli powder 1 teaspoon
Coriander Powder (Dhania) 1 teaspoon
Jaggery 1 tablespoon
Raw Peanuts (Moongphali) 1/2 cup
Salt To taste
Water 1/2 cup
Mustard oil 1 teaspoon
Coriander (Dhania) Leaves For garnish, chopped as required

Instructions

  1. Preheat the Pressure Cooker:
    Begin by heating the mustard oil in a preheated pressure cooker. Allow the oil to get hot, and then add the ajwain (carom seeds) and asafoetida (hing). Saute for a few seconds until the spices release their fragrance.

  2. Saute Onions, Garlic, and Ginger:
    Add the chopped onions, finely chopped garlic, and ginger to the cooker. Stir continuously and cook until the onions become soft and golden brown.

  3. Cook Tomatoes and Spices:
    Once the onions are ready, add the finely chopped tomatoes along with turmeric powder, red chili powder, coriander powder, and jaggery. Continue to cook, stirring occasionally, until the tomatoes soften and break down into a mushy consistency.

  4. Add Gawar Phali and Peanuts:
    Add the prepared gawar phali (cluster beans), raw peanuts, and salt to taste. Stir everything together to ensure that the beans and peanuts are well coated in the flavorful masala.

  5. Pressure Cook:
    Pour in 1/2 cup of water, stir again, and close the lid of the pressure cooker. Cook for 2 whistles on medium heat.

  6. Release Pressure and Final Touch:
    After two whistles, turn off the heat and release the pressure immediately. Open the lid carefully, and stir in the chopped coriander leaves to add a fresh aroma to the dish.

  7. Serve:
    Transfer the Gawar Phali Masala Sabzi into a serving bowl. Garnish with extra coriander leaves if desired.
