Ingredients:
- 200 grams Ginger, finely chopped
- 50 grams Walnuts, roasted
- 2 tablespoons Coriander seeds, roasted
- 2 tablespoons Fenugreek seeds, roasted
- 2 tablespoons Cumin seeds, roasted
- 2 tablespoons Whole black pepper, roasted
- 2-inch Tamarind
- 1/4 cup Jaggery (Gur)
- 10 Curry leaves
- 1 teaspoon Asafoetida (Hing)
- Salt to taste

Cook Time: 20 minutes
Instructions:
- Start by roasting all the dry ingredients (coriander seeds, fenugreek seeds, cumin seeds, black pepper) in a pan until they release a fragrant aroma. Set them aside to cool.
- Once the roasted ingredients have cooled down, place them along with the tamarind, jaggery, curry leaves, and asafoetida in a mixer grinder.
- Grind the ingredients into a smooth paste.
- Transfer the chutney to a bowl, adjust the salt to taste, and it’s ready to serve.
- Serve the Ginger Walnut Chutney alongside mixed vegetable sambar, rice, and ghee for a flavorful meal.
