Ingredients:

  • 200 grams Ginger, finely chopped
  • 50 grams Walnuts, roasted
  • 2 tablespoons Coriander seeds, roasted
  • 2 tablespoons Fenugreek seeds, roasted
  • 2 tablespoons Cumin seeds, roasted
  • 2 tablespoons Whole black pepper, roasted
  • 2-inch Tamarind
  • 1/4 cup Jaggery (Gur)
  • 10 Curry leaves
  • 1 teaspoon Asafoetida (Hing)
  • Salt to taste

Preparation Time: 10 minutes
Cook Time: 20 minutes

Instructions:

  1. Start by roasting all the dry ingredients (coriander seeds, fenugreek seeds, cumin seeds, black pepper) in a pan until they release a fragrant aroma. Set them aside to cool.
  2. Once the roasted ingredients have cooled down, place them along with the tamarind, jaggery, curry leaves, and asafoetida in a mixer grinder.
  3. Grind the ingredients into a smooth paste.
  4. Transfer the chutney to a bowl, adjust the salt to taste, and it’s ready to serve.
  5. Serve the Ginger Walnut Chutney alongside mixed vegetable sambar, rice, and ghee for a flavorful meal.
