Glass Noodles with Vegetable, Egg, and Sausage Soup

Ingredients

  • 2 packs glass noodles
  • 1 ripe tomato, chopped
  • 1 egg, cooked into an omelet and sliced
  • Sausage (as desired)
  • Chinese mustard greens (as desired)
  • Red chili peppers (as desired)

Instructions

  1. Prepare the Glass Noodles: Start by soaking the glass noodles in hot water until they become tender. Drain the water and set the noodles aside in a bowl or plate.

  2. Cook the Vegetables and Sausage: Bring a pot of water to a boil. Add the Chinese mustard greens and red chili peppers to the boiling water. If you’re using pre-cooked sausage, you can add it directly without boiling. If you’re using raw sausage, ensure it’s cooked thoroughly. Boil until the vegetables are tender. For a crispier texture, add the Chinese mustard greens only after the sausage has started to cook.

  3. Assemble the Soup: Pour the hot broth, along with the vegetables, chili peppers, and sausage, over the prepared glass noodles. Arrange the chopped tomato and sliced omelet on top.
