Instructions

  1. Begin by marinating the chicken pieces with turmeric and salt; set aside for a moment.
  2. Create a flavorful paste by blending together the ginger, garlic, coriander, and green chilies, then combine this mixture with the marinated chicken and allow it to marinate for 30 minutes.
  3. In a pan, heat 1 teaspoon of oil and sauté the sliced onions, along with the additional green chilies, ginger, and garlic for approximately three minutes until they are fragrant.
  4. Add the grated coconut to the pan and continue sautéing for another 5-7 minutes, until the mixture is golden and the onions are crispy. Set this mixture aside.
  5. On a separate dry pan, roast the spices: cinnamon, cardamom, anise seed, black peppercorn, poppy seeds, Kashmiri red chilies, star anise, mace, nutmeg, and a pinch of turmeric until aromatic.
  6. Combine the sautéed onion-coconut mix and the roasted spices in a grinder to create the Xacuti masala paste.
  7. In the same pan, heat 2 teaspoons of oil and add the remaining sliced onions and green chilies. Sauté for about one minute.
  8. Introduce the marinated chicken pieces into the pan, stirring well. After two minutes, add the Xacuti masala and sufficient water to create a saucy consistency.
  9. Cover the pan and let the chicken cook for 15 minutes, or until it becomes tender and the flavors meld together beautifully.
  10. Once cooked, garnish the Chicken Xacuti with fresh coriander leaves for a vibrant touch.
  11. Serve the dish hot, accompanied by Indian chapatis, fresh bread, or steamed rice, with lemon wedges on the side for an extra zesty kick.
