Bandeng Presto with Green Chili Sauce
Ingredients:
- 2 whole bandeng fish (presto style)
- Salt, to taste
- Sugar, 1/4 teaspoon
- Seasoning powder, 1 tablespoon
- Sweet soy sauce (kecap manis), 100 cc
- Water, 100 cc
For the Green Chili Sauce:
- 6 large green chilies
- 5 bird’s eye chilies
- 2 cm ginger
- 1 large tomato
- 2 shallots
- 2 cloves garlic
Instructions:

Prepare the Fish: Cut the bandeng fish into pieces according to your preference. Briefly fry the fish in hot oil until it is slightly cooked. Set aside.

Prepare the Green Chili Sauce: Slice the green chilies, bird’s eye chilies, ginger, tomato, shallots, and garlic.

Cook the Sauce: Heat a pan with a little oil over medium heat. Sauté all the sliced ingredients until they release their fragrant aroma.

Make the Sauce Mixture: Add the water to the pan, then season with salt, sugar, seasoning powder, and sweet soy sauce. Stir well until all ingredients are combined.

Combine Fish and Sauce: Gently place the fried bandeng pieces into the pan with the sauce. Allow the mixture to simmer until the liquid reduces slightly and the fish absorbs the flavors.

Serve: Once the sauce has thickened and the fish is well-coated, remove from heat. Serve the Bandeng Presto with Green Chili Sauce hot.
