Ayam Cabe Ijo: A Flavorful Green Chili Chicken Dish
Ingredients:
- 1/2 kg chicken, cut into pieces
- 2-3 bay leaves
- Seasoning powder (such as Royco), to taste
- White sugar, to taste
- For the Spice Paste:
- 100 grams green chilies
- Green bird’s eye chilies (to taste, if desired for extra heat)
- 5 shallots
- 5 cloves garlic

Prepare the Chicken:
- Thoroughly wash the chicken pieces.
- Simmer the chicken with your choice of spices until fully cooked. The simmering time will depend on your preferred recipe for the braising spices.

Prepare the Spice Paste:
- In a pot, bring water to a boil and add the green chilies and both shallots and garlic.
- Simmer the ingredients until they are softened.

Blend the Spice Paste:
- Once softened, drain and transfer the cooked chilies, shallots, and garlic to a blender or mortar and pestle.
- Grind until you achieve a coarse or fine paste, depending on your texture preference.

Cook the Spice Paste:
- Heat oil in a skillet over medium heat.
- Add the ground spice paste and bay leaves, and sauté until aromatic and golden brown.

Combine and Simmer:
- Add the cooked chicken to the skillet with the spice paste.
- Pour in enough water to cover the chicken.
- Season with seasoning powder and white sugar to taste. Adjust the flavors according to your preference.
- Allow the mixture to simmer until the sauce reduces and thickens to your desired consistency.

- Once the sauce has reduced and the flavors have melded, remove from heat.
- Serve hot with steamed rice for a complete meal.
