Ayam Cabe Ijo Recipe
Ingredients:
- 1 kg chicken, cut into 8 pieces (or as desired)
- Seasoning Mix:
- Salt to taste
- Coriander to taste
- 3 cloves garlic
- 2 segments turmeric
- Lemongrass (optional)
- Ground Spice Blend:
- Green chilies, to taste
- Bird’s eye green chilies, to taste
- Salt to taste
- Sugar to taste
- Lime juice to taste
- 8 cloves garlic
- 10 shallots
- 4 tomatoes (preferably green tomatoes)
- Lemongrass and kaffir lime leaves (optional)
Steps:
-
Prepare the Chicken: Clean the chicken pieces thoroughly. Season them with the seasoning mix ingredients—salt, coriander, garlic, turmeric, and lemongrass. Let the chicken marinate for a while to absorb the flavors.
-
Fry the Chicken: Heat oil in a frying pan over medium heat. Fry the marinated chicken pieces until they are golden brown and crispy. Remove from the pan and set aside.
-
Prepare the Spice Paste: In a saucepan, boil the green chilies, bird’s eye chilies, tomatoes, shallots, and garlic until they are half-cooked. Drain and let them cool slightly. Then, coarsely grind the mixture.
-
Cook the Spice Paste: In the same pan used for frying the chicken, add a bit more oil and sauté the ground spice paste until it becomes aromatic. Season with salt, sugar, and lime juice to taste. If desired, add lemongrass and kaffir lime leaves for extra flavor.
-
Combine Chicken and Spice Paste: Add the fried chicken pieces to the pan with the cooked spice paste. Stir well to ensure the chicken is coated evenly with the spices. Cook until the chicken is fully cooked and the flavors meld together.
-
Final Adjustments: Taste and adjust the seasoning if needed. Once the chicken is cooked and aromatic, it’s ready to serve.
-
Serve: Serve the Ayam Cabe Ijo hot, straight from the pan. Enjoy this flavorful and spicy dish with steamed rice or your favorite side.
