Balado Hijau Asin Gabus
Ingredients:
- 100 grams salted gabus (fish), cut into pieces and deep-fried until crispy
- Blended Spice Mix:
- 5-6 large green chilies
- 4 green bird’s eye chilies, or adjust to taste
- 1 green tomato
- 5 shallots
- 3 cloves of garlic
- 2 bay leaves
- 2 kaffir lime leaves, veins removed
- 2 cm galangal, crushed
- Seasoning:
- Sugar to taste
- Salt to taste
Instructions:

Prepare the Spice Mixture:
Start by blending the green chilies, bird’s eye chilies, green tomato, shallots, garlic, bay leaves, kaffir lime leaves, and crushed galangal until smooth. Set aside. -
Sauté the Spices:
Heat a little oil in a pan over medium heat. Add the blended spice mixture and sauté until fragrant. Toss in the bay leaves, kaffir lime leaves, and galangal. Season with sugar and salt to taste. Continue to cook until the spices are well-cooked and the flavors meld together. If you prefer a wetter consistency, you can add a little water and let it simmer until the liquid evaporates. -
Combine with Fried Gabus:
Add the crispy salted gabus to the pan. Stir gently to coat the fish with the spicy sauce, making sure the flavors are well absorbed. Cook for another few minutes to allow the seasoning to meld with the fish. -
Serve:
