Spicy Green Chili Egg and Bitter Melon Stir-Fry

Telur Pare Cabe Ijo

Ingredients

Quantity Ingredient
6 Chicken eggs, boiled and peeled
1 Bitter melon (pare), seeds removed, cut to preference
10 Green chilies (cabe ijo)
5 Shallots
1 Garlic
1 Green tomato, sliced
To taste Salt
To taste Seasoning (optional)
To taste Cooking oil

Instructions

  1. Prepare the Bitter Melon: Place the cut bitter melon in a skillet, sprinkle with 1 tablespoon of salt, and gently squeeze to release its moisture. Rinse thoroughly until clean and set aside.

  2. Fry the Bitter Melon: Heat oil in the skillet, then fry the bitter melon until it develops a crispy skin. Remove from the skillet and set aside.

  3. Fry the Eggs: In the same skillet, fry the boiled eggs until golden brown. Remove and set aside.

  4. Prepare the Spice Mixture: While frying, coarsely grind the green chilies, salt, shallots, and garlic. For the chilies, using a mortar and pestle for a rough texture is preferred.

  5. Cook the Mixture: Heat about 5 tablespoons of oil in the skillet. Add the sliced green tomato and sauté until soft. Incorporate the ground chili mixture and cook until the chilies are well done, stirring occasionally. If desired, add seasoning.

  6. Combine Ingredients: Add the fried eggs and bitter melon back into the skillet, mixing well to combine all ingredients.

  7. Serve: Once everything is thoroughly mixed and heated, remove from the skillet and serve hot.
