Telur Cabe Ijo (Green Chili Eggs)

Ingredients:

  • 4 eggs, hard-boiled and peeled
  • 1 turmeric leaf, sliced into pieces
  • 2 kaffir lime leaves
  • 1 stalk lemongrass
  • Salt, to taste
  • Sugar, to taste (optional)
  • Chicken bouillon powder, to taste (optional)

For the Spice Paste:

  • 100 grams green curly chilies
  • 1 green tomato, thinly sliced
  • 5 shallots, thinly sliced
  • 2 garlic cloves
  • 2 candlenuts

Instructions:

  1. Prepare the Eggs:

    • Set aside the hard-boiled eggs that have been peeled.
  2. Make the Spice Paste:

    • Begin by grinding the candlenuts until smooth.
    • Next, coarsely grind the garlic and green chilies.
    • Finally, add the sliced shallots and green tomato to the paste and press lightly to release their juices without making the mixture too smooth.
  3. Cook the Spice Paste:

    • Heat a sufficient amount of oil in a pan over medium heat.
    • Sauté the spice paste along with the turmeric leaf, kaffir lime leaves, and lemongrass until fragrant.
  4. Season and Adjust:

    • Add salt and sugar to taste. If the paste begins to burn, add a little water to adjust the consistency.
  5. Combine and Finish:

    • Gently add the hard-boiled eggs to the pan and stir well to coat the eggs with the spice paste. Taste and adjust the seasoning if necessary.
  6. Serve:

    • Once the eggs are well-coated and heated through, remove from heat. Serve warm and enjoy!
