Telor Ceplok Cabe Hijau Recipe
Ingredients:
- 3 large eggs
- 5 shallots
- 4 cloves of garlic
- 8 green chilies
- 2 bay leaves
- 1 cm piece of galangal
- Salt, to taste
- MSG (monosodium glutamate), to taste
- Sugar, to taste
- Chicken or vegetable bouillon powder, to taste
- Water, as needed
- Cooking oil, for frying

Prepare the Eggs: Heat some cooking oil in a skillet over medium heat. Fry the eggs until the whites are set but the yolks remain runny, or cooked to your desired doneness. Once done, transfer the eggs to a paper towel-lined plate to drain excess oil.

Prepare the Aromatics: While the eggs are frying, slice the shallots, garlic, and green chilies. Tear the bay leaves and slice the galangal thinly. Set these ingredients aside.

Cook the Aromatics: In a separate pan, heat a generous amount of oil over medium heat. Add the sliced shallots and garlic, cooking until they become fragrant and start to turn golden brown. Next, add the green chilies, bay leaves, and galangal to the pan. Stir-fry the mixture for a few minutes until the chilies soften.

Create the Sauce: Pour in enough water to create a sauce base. Season with salt, sugar, MSG, and bouillon powder to taste. Stir well to combine and let the sauce simmer until slightly reduced and flavorful.
