Telur Dadar Hijau (Green Omelette)

Ingredients:

  • 2 large eggs
  • A handful of young chili leaves
  • 4 red chilies
  • 4 bird’s eye chilies (adjust to taste)
  • 4 shallots
  • A small piece of ginger
  • Seasoning (to taste)
  • Cooking oil

Instructions:

  1. Prepare the Spice Paste: In a mortar and pestle, grind the red chilies, bird’s eye chilies, shallots, and ginger into a smooth paste.

  2. Incorporate the Leaves: Add the young chili leaves to the spice paste and continue grinding until the mixture is finely blended.

  3. Mix the Eggs: Crack the eggs into a bowl, and season with a pinch of seasoning. Stir in the spice paste mixed with the chili leaves until well combined.

  4. Cook the Omelette: Heat a generous amount of cooking oil in a pan over medium heat. Pour the egg mixture into the pan and cook until the omelette is golden brown and cooked through, about 2-3 minutes on each side.

  5. Serve: Transfer the cooked omelette to a plate and serve hot, garnished with additional chili leaves if desired.

This vibrant and flavorful Telur Dadar Hijau is a delightful variation on the traditional omelette, bringing a fresh and spicy twist to your meal.
