Ingredients:
- 6 slices Whole Wheat Brown Bread
- 1 Onion, thinly sliced
- 2 Potatoes (Aloo), boiled and cubed
- 1/2 cup Rajma (Large Kidney Beans), cooked
- 1 inch Ginger, grated
- 1 clove Garlic, chopped
- 1 teaspoon Turmeric powder (Haldi)
- 1 teaspoon Red Chilli powder
- 1 teaspoon Garam masala powder
- 1 teaspoon Chaat Masala Powder
- Salt, to taste
- Oil, for cooking
Preparation:
- Soak the Rajma: Start by soaking the rajma overnight. Once soaked, cook the beans until soft, then drain any excess water and set them aside.
- Boil the Potatoes: Boil the potatoes until soft. Peel and cut them into small cubes. Set aside.
- Make the Rajma Masala Filling:
- Heat a teaspoon of oil in a skillet. Add the grated ginger and chopped garlic. Sauté for a few seconds until fragrant.
- Add the cooked rajma and cubed potatoes. Stir well to combine, then add turmeric powder, red chilli powder, garam masala, chaat masala, and salt. Sauté the mixture over medium-high heat until the masala thickens and most of the moisture evaporates, leaving a dry filling. Adjust the seasoning to taste.
- Cool the Filling: Once the rajma masala is cooked, turn off the heat and let it cool. After cooling, mix in the thinly sliced onions (and optional chopped green chilies for an extra crunch).
- Assemble the Sandwich:
- Place a slice of whole wheat bread on a clean surface. Spread a generous spoonful of the rajma masala filling over it.
- Top with another slice of bread, pressing down slightly to compact the filling.
- Grill the Sandwich:
- Spread softened butter on the top slice of the sandwich. Heat a sandwich maker or grill pan. Place the sandwich in the pan with the buttered side facing down.
- Butter the other side of the sandwich and grill it until golden brown and crispy on both sides.
