Instructions:

  1. Prepare the Spice Paste:

    • Begin by blending the red chilies, shallots, garlic, galangal, and roasted candlenuts into a smooth paste. You can use a food processor or mortar and pestle for this step.
  2. Cook the Spice Paste:

    • Heat a little oil in a pan over medium heat. Add the blended spice paste along with the smashed lemongrass, tamarind slices, and bay leaves. Sauté until the mixture is fragrant and the oil starts to separate from the paste.

    • Add salt and sugar to taste. Stir well to incorporate, then pour in 1/4 cup of water. Continue to cook the mixture until it thickens and the spices are well-cooked. Turn off the heat.
