Ingredients

Ingredient Quantity
Boneless pork loin roast 3 to 3 1/2 pounds
Onion 2 to 3 medium
Lemon rind 1 piece
Sugar 2 tablespoons
Tarragon 2 teaspoons
Salt 1 teaspoon
Pepper 1 teaspoon
Clove 1/4 teaspoon
Ground ginger 1/4 teaspoon
Nutmeg 1/4 teaspoon
Bay leaves 3 leaves
Carrot 1 large, chopped
Celery 1 stalk, chopped
All-purpose flour 1/4 cup
Potato 1 large, quartered
Guinness beer 1 bottle (12 oz)

Instructions

Marinade (48 hours)

  1. Prepare the Marinade: In a deep dish, place the boneless pork loin roast.
  2. Combine Ingredients: Add one bottle of Guinness beer, onion (peeled and sliced), lemon rind, sugar, tarragon, salt, pepper, clove, ground ginger, nutmeg, and bay leaves.
  3. Marinate: Pour the mixture over the meat, ensuring it is fully covered. If needed, add more Guinness to completely submerge the pork.
  4. Refrigerate: Cover the dish and refrigerate for 1 to 2 days, turning the pork occasionally to allow the flavors to penetrate the meat.

Roast (1 hour, 45 minutes to 2 1/2 hours)
5. Preheat the Oven: Set your oven to 350°F (180°C).
6. Prepare the Roasting Pan: Strain the marinade, reserving both the solids and liquid.
7. Place Vegetables: In the bottom of a roasting pan, spread the solids (onion, lemon rind, spices), chopped carrot, and celery.
8. Position the Pork: Place the marinated pork roast on top of the vegetables.
9. Add Liquid: Pour a little of the reserved marinade over the pork.
10. Roast the Pork: Place the pan in the oven and roast the pork for 1 hour.
11. Baste and Continue Roasting: After the first hour, pour one-quarter of the remaining marinade liquid over the roast. Continue roasting for 1 to 1 1/2 hours more, basting the pork occasionally with drippings and more marinade, until a meat thermometer registers 170°F.

Optional – Adding Vegetables
12. Prepare Carrots and Potatoes: If desired, add extra carrots and quartered potatoes to the roasting pan for the final 45 minutes to 1 hour of cooking time. Baste them along with the pork for added flavor.

Gravy (15 minutes)
13. Make the Gravy: In a small bowl, combine the flour and 1/3 cup of marinade or extra Guinness to form a smooth paste.
14. Finish the Gravy: Remove the carrots and potatoes (if used) and transfer them to serving dishes to keep warm. Place the roast on a platter and keep warm as well.
15. Skim the Fat: Skim any fat from the cooking liquid and strain it, pressing the solids to extract the flavor.
16. Thicken the Gravy: Add the flour paste to the strained cooking liquid, then stir in 1/2 cup of Guinness and enough water (if needed) to make 2 cups of total liquid.
17. Cook the Gravy: Return the liquid to the roasting pan or a saucepan, and cook over medium heat, stirring constantly, until the sauce thickens to your desired consistency.
18. Serve: Serve the gravy over sliced pork and enjoy with the roasted vegetables.

Serving Suggestions

This Pork Roast in Spicy Guinness Sauce pairs wonderfully with a variety of side dishes. Try serving it alongside mashed potatoes or a crisp green salad for a balanced and hearty meal. If you’re adding roasted carrots and potatoes during the cooking process, they will make an excellent side dish to complement the rich flavors of the roast. A nice glass of Guinness or any dark beer would make the perfect drink pairing for this dish.

Pro Tips for Success

  • Marinating: The longer you allow the pork to marinate, the more flavorful it will become. Ensure you turn the meat every 12 hours to ensure even seasoning absorption.
  • Basting: Keep basting the pork roast with the marinade during roasting to maintain moisture and enhance flavor.
  • Gravy Thickness: If you prefer a thicker gravy, you can add more flour paste, but be sure to cook it long enough to avoid a raw flour taste.

This recipe is one of those timeless dishes that never fails to impress, making it perfect for holiday dinners or a special Sunday meal. With the combination of tender, juicy pork and the complex flavors from the Guinness marinade, it’s bound to become a staple in your kitchen. Whether you’re serving it to family, friends, or guests, this roast is sure to leave everyone asking for seconds!
