Instructions

  1. Cook the Drumsticks:
    Begin by placing the drumsticks in a pressure cooker. Add about 1/4 cup of water and cook the drumsticks on medium heat for two whistles (2 cities). Once done, turn off the gas and allow the pressure to release naturally. Open the cooker, remove the drumsticks, and set them aside. The drumsticks should be tender but still hold their shape.

  2. Prepare the Masala:
    Heat a teaspoon of oil in a large frying pan or kadhai over medium heat. Once the oil is hot, add the kalonji (nigella seeds) and grated ginger. Stir fry for about 20 seconds until the spices release their fragrance.

  3. Cook the Tomatoes and Spices:
    Add the finely chopped tomatoes, bay leaves, cinnamon stick, and curry leaves to the pan. Cook the mixture until the tomatoes soften and become mushy, stirring occasionally. This should take about 5-7 minutes.

  4. Add Ground Spices and Drumsticks:
    Once the tomatoes have softened, add the turmeric powder, coriander powder, asafoetida (hing), and red chili powder to the pan. Stir well to combine all the spices. Add salt to taste. Now, add the cooked drumsticks to the masala. Gently stir to coat the drumsticks with the spicy tomato mixture.

  5. Simmer the Curry:
    Reduce the flame to low, cover the pan, and let the curry cook for another 5 minutes to allow the flavors to meld together. Stir occasionally and check the seasoning, adjusting salt and spice levels as needed.

  6. Garnish and Serve:
