Gurami Rica-Rica a la Mamiqqq
Ingredients:
- 1 kg gurami fish (cleaned, scaled, and cut into pieces)
- Juice of 1 lime
- Coriander to taste
- 6 cloves garlic
- 5 shallots
- Salt to taste
- 1 onion (sliced)
- 2 stalks lemongrass (thinly sliced)
- 5 tomatoes (diced)
- 1 tablespoon chicken bouillon powder (Masako)
- 1 teaspoon sugar
- Red chilies to taste (sliced)
- Water as needed
- Oil for frying
Steps:

Prepare the Fish: Wash the gurami fish thoroughly. Rub the fish pieces with lime juice and let them sit for a few minutes to marinate.

Make the Spice Paste: In a blender or mortar and pestle, grind the coriander, 3 cloves of garlic, and salt into a smooth paste. Rub this spice paste all over the marinated fish pieces. Heat oil in a pan and fry the fish until golden brown and cooked through. Remove the fish from the pan and set aside.

Prepare the Aromatics: Slice the shallots, remaining garlic cloves, onion, and red chilies.

Sauté the Ingredients: In the same pan used for frying the fish, add a bit more oil if needed. Sauté the sliced shallots, garlic, onion, lemongrass, tomatoes, and red chilies until fragrant and the onions are translucent.

Add Seasonings: Sprinkle in the chicken bouillon powder (Masako) and sugar. Mix well to combine.

Simmer: Add enough water to the pan to create a sauce. Bring to a boil, then reduce the heat and let it simmer until the flavors meld and the sauce thickens slightly.

Combine and Cook: Gently place the fried fish pieces back into the pan. Simmer the fish in the sauce until the sauce has reduced and thickened, and the fish is well-coated with the rich, aromatic sauce.

Serve: Once the sauce has thickened and the fish is well-coated, remove from heat. Serve the Gurami Rica-Rica hot with steamed rice.
