Pumpkin and Tomato Bake Recipe πŸŽƒπŸ…

Overview:

This delightful Pumpkin and Tomato Bake recipe is a true celebration of fall flavors, perfect for a cozy supper or as a flavorful addition to any buffet spread. Inspired by the essence of “French Country Kitchen” by Ann Hughes-Gilbey, this dish offers a delightful fusion of Canadian and European culinary influences. It’s a low-protein, low-cholesterol, and healthy option, packed with spicy notes that add an extra kick to your palate. Whether it’s for Thanksgiving or any occasion, this dish is ready in under an hour, making it an ideal choice for those seeking an easy yet impressive recipe.

Ingredients:

  • 2 1/2 cups of pumpkin, peeled and diced into 1/2 inch cubes
  • 6 onions, thinly sliced
  • 2 tablespoons of sugar
  • 1 pound of tomatoes, thinly sliced
  • 1 garlic clove, minced
  • 2-3 tablespoons of fresh basil, chopped
  • 2-3 tablespoons of tarragon, chopped
  • 2 tablespoons of parsley, chopped
  • Salt, to taste
  • Cayenne pepper, to taste
  • 1 tablespoon of wine (or water)
  • 2/3 cup of breadcrumbs
  • 2 tablespoons of butter
  • Cooking oil

Instructions:

  1. Prepare the Pumpkin: Start by removing any seeds from the pumpkin and cutting it into 3/4 inch strips. Cook the pumpkin strips in boiling salted water for 2-3 minutes until slightly tender. Drain the cooked pumpkin and pat dry thoroughly with paper towels. Then, dice the pumpkin strips into approximately 1/2 inch cubes.

  2. SautΓ© Onions: Heat 2 tablespoons of cooking oil in a large frying pan over medium heat. Add the thinly sliced onions and sautΓ© them slowly until they turn golden brown and caramelized. Stir in the sugar until it dissolves completely.

  3. Cook Pumpkin: To the caramelized onions, add the diced pumpkin and fry gently until the pumpkin starts to turn transparent and soft. Ensure the pumpkin is evenly coated with the caramelized onions. Once done, transfer the pumpkin and onion mixture evenly into the bottom of a shallow baking dish.

  4. Prepare Tomato Mixture: In the same frying pan, heat the remaining oil. Add the thinly sliced tomatoes, minced garlic, chopped basil, tarragon, and half of the chopped parsley. Season generously with salt and cayenne pepper to add a spicy kick. Cook the tomato mixture gently until the tomatoes start to collapse and release their juices, taking care not to break the tomato slices.

  5. Layer Tomatoes Over Pumpkin: Once the tomato mixture has reduced slightly, carefully spread the cooked tomatoes in neat rows over the layer of pumpkin in the baking dish. Ensure the pumpkin is evenly covered with the tomato slices.

  6. Deglaze and Season: Add a tablespoon of wine (or water) to the frying pan with the remaining juices and bits. Whisk gently to deglaze the pan and incorporate all the flavors. Pour this flavorful liquid evenly over the layered tomatoes and pumpkin in the baking dish.

  7. Top with Breadcrumbs: In a small bowl, mix the breadcrumbs with the remaining chopped parsley. Sprinkle this breadcrumb mixture evenly over the tomatoes and pumpkin in the baking dish.

  8. Add Butter and Bake: Dot the top of the dish with small pieces of butter for added richness and flavor. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Once preheated, place the baking dish in the oven and bake for approximately 20 minutes, or until the top is nicely browned and the dish is heated through.

  9. Serve and Enjoy: Once baked to perfection, remove the Pumpkin and Tomato Bake from the oven and allow it to cool slightly before serving. This dish pairs beautifully with crusty bread or as a side to roasted meats. Enjoy the delicious flavors of fall in every bite!
