Haryana Style Egg Curry

If you’re traveling along the highways of Haryana, you’ll find this dish at every roadside dhaba. Packed with spice and flavor, this egg curry is a treat for your taste buds. The addition of paneer (cottage cheese) and green peas enhances the taste, making it even more delicious.

Ingredients:

  • 4 eggs (boiled, peeled, and halved)
  • 1 cup green peas
  • 200 grams paneer (cubed)
  • 1 onion (finely chopped)
  • 2 tomatoes (pureed)
  • 2 tsp ginger-garlic paste
  • 3 green chilies
  • 2 tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • ½ tsp garam masala powder
  • ¼ cup fresh coriander (chopped)

Preparation Time: 15 minutes

Cooking Time: 30 minutes

Instructions:

  1. Prepare Ingredients:
    Start by prepping all the ingredients. Cut the boiled eggs in half and set them aside.

  2. Fry the Paneer:
    In a kadhai (wok), heat some oil. Add the paneer cubes and fry them until they turn golden brown. Once done, remove them and set them aside.

  3. Sauté Onions and Spices:
    In the same kadhai, add a little more oil. Sauté the chopped onions and green chilies until the onions turn golden brown. Add the ginger-garlic paste and cook for another 2 minutes.

  4. Cook the Tomato Puree:
    Add the tomato puree and cook for 3 minutes. Stir occasionally to avoid burning.

  5. Add Dry Spices:
    Add the coriander powder, turmeric powder, and red chili powder (excluding garam masala) to the mixture and mix well.

  6. Simmer the Curry:
    Add the green peas and 1.5 cups of warm water. Let the curry simmer for 10 minutes, allowing the flavors to blend.

  7. Add Eggs and Paneer:
    Add the fried paneer cubes and boiled eggs to the curry and cook for 3 more minutes.

  8. Finish the Dish:
    Stir in the garam masala powder and fresh coriander leaves. Mix everything well and turn off the heat. Let it sit covered for 10 minutes.

  9. Serve:
    Serve this spicy and flavorful Haryana Style Egg Curry with tawa paratha, boondi raita, and rice for a perfect lunch.
