Ingredients:

1 1/2 dried lentils
6 cups water
1 onion
1 1/2 cloves garlic
2 chili peppers
1 carrot
1 potato
1 tsp ground coriander
2 canned tomatoes
3 tbsp fresh cilantro
1 tsp salt

Instructions:

  1. Prepare Lentils:

    • In a large soup pot, bring the lentils and water to a boil.
    • Reduce the heat, cover, and simmer for about 20 minutes or until the lentils are tender.
  2. Saute Aromatics:

    • Meanwhile, in a skillet, heat oil over medium heat.
