  2. Remove the stems, then carefully cut them lengthwise.
  3. Remove the seeds from the chilies, and place them in a small bowl.
  4. Cover the chilies with hot water and let them sit for 30 minutes to soften.
  5. After 30 minutes, discard the water and transfer the softened chilies to a blender jar.
  6. Add the vinegar and garlic cloves to the blender with the chilies, and puree until smooth; set aside.
  7. In a large mixing bowl, combine the ground pork with paprika, dried oregano, salt, ground cumin, ground coriander, black pepper, and ground allspice.
  8. Mix the spices and pork thoroughly until well combined.
  9. Add the chili sauce mixture to the seasoned pork, and mix until evenly distributed.
  10. If making sausage links, stuff the chorizo mixture into casings using a sausage stuffer.
  11. Alternatively, if making patties, shape the chorizo mixture into round patties using your hands.
  12. Heat a skillet over medium-high heat and add a small amount of oil.
  13. Once the skillet is hot, add the chorizo patties or links.
  14. Cook the chorizo for about 5-7 minutes on each side, or until fully cooked through and browned on the outside.
  15. Once cooked, transfer the chorizo to a serving platter and enjoy hot with your favorite breakfast sides!

Tips:

  • Spice Level: Adjust the amount of dried red chilies according to your spice preference.
  • Storage: Store any leftover chorizo in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
