Ingredients:

  • 5 hot chile peppers
  • 1 cup hot water
  • 1 cup flour

  3. Blend the Chiles: Pour the soaked chile mixture into the container of an electric blender. Cover and process until smooth, stopping once to scrape down the sides. Set the mixture aside.

  4. Prepare the Spice Mix: In a small bowl, combine the flour, ground cumin, ground coriander, sugar, and caraway seeds. Set aside.

  5. Cook the Aromatics: In a small skillet, heat oil over medium-high heat. Add the diced onion and minced garlic, stirring constantly, and cook for about 5 minutes until the onion is tender.

  6. Incorporate the Spice Mix: Add the flour mixture to the skillet with the cooked onion and garlic. Stir well; the mixture will be dry. Continue stirring constantly and cook for about 1 minute.

  7. Thicken the Sauce: Gradually add the blended chile mixture to the skillet. Cook over medium heat, stirring constantly, until the mixture thickens and becomes bubbly.
