Ingredients:

  • 8 sardines (or substitute with tuna)
  • 4 cloves garlic, sliced
  • 4 shallots, sliced
  • 8 bird’s eye chilies (adjust according to taste)
  • 1 stalk green onion, chopped
  • 1 tomato, diced
  • 1 packet tomato sauce
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon MSG (optional)
  • 1 packet Royco seasoning
  • 1 tomato
  • 5 bird’s eye chilies

Instructions:

  1. Prepare the Sardines:
    Begin by cleaning the sardines thoroughly, removing the heads and tails, and cutting them into two pieces. Fry the sardine pieces briefly until they are lightly golden. Set aside.

  2. Sauté Aromatics:
    In a pan, heat some oil and sauté the sliced shallots, bird’s eye chilies, and garlic until fragrant. Add the finely ground spice mixture, which includes 1 tomato and 5 bird’s eye chilies. Continue sautéing for a few minutes.

  3. Combine Ingredients:
    Add the fried sardines to the pan. Pour in enough water to cover the sardines and season with 1/2 teaspoon of salt, 1/2 teaspoon of MSG (if using), and 1 packet of Royco seasoning. Stir in 1 tablespoon of sugar and 1 packet of tomato sauce.

  4. Simmer and Season:
    Allow the mixture to come to a boil, then reduce the heat and let it simmer until the sauce thickens slightly. Adjust the seasoning with a splash of soy sauce to taste.

  5. Finish and Serve:
    Add the diced tomato and chopped green onion. Let the dish cook until the tomatoes are softened and the sauce has reduced to your desired consistency. Taste and adjust seasoning if necessary.
