Instructions

  1. Roasting the Ingredients
    Start by dry roasting the horse gram (Kollu/Kulith) on medium heat. Stir it continuously until the grains turn golden brown and start releasing a fragrant aroma. Once roasted, remove from the pan and set aside.

  2. Roasting the Red Chillies
    In the same pan, dry roast the Byadagi and Guntur dried chillies. Let them roast until they start to release their distinct aroma, then remove them from the pan and set aside to cool.

  3. Roasting Curry Leaves and Tamarind
    Next, dry roast the curry leaves and tamarind together until the curry leaves become crisp. Set this mixture aside and allow everything to cool down to room temperature.

  4. Grinding the Mixture
    Once all the roasted ingredients have cooled, transfer them to a mixer grinder. Add the asafoetida (hing) and salt to the grinder. Pulse everything until it forms a coarse powder.

  5. Storing the Chutney Pudi
    Store the prepared chutney pudi in an airtight container. It will remain fresh for up to a month if stored properly in a cool, dry place.

  6. Serving Suggestions
