Ikan Klotok Stir-Fried with Shallots Recipe

Ingredients:

  • 24 shallots
  • 2 cloves garlic
  • 1 bay leaf
  • 10 bird’s eye chilies (or to taste)
  • 1/2 packet shrimp paste (*optional)
  • 1 whole ikan klotok, cut into small pieces (or substitute with anchovies)
  • 2 tablespoons sweet soy sauce
  • 1 teaspoon seasoning powder (Masako or Royco)
  • 3 tablespoons cooking oil

Instructions:

  1. Prep the Aromatics: Slice the garlic and cut each shallot into quarters. Chop the bird’s eye chilies according to your spice preference.

  2. Fry the Fish: Heat oil in a pan and fry the ikan klotok pieces until crispy and dry. If using anchovies, skip this step and add them later.

  3. Sautรฉ Garlic: In a separate pan, heat 3 tablespoons of cooking oil over medium heat. Add the sliced garlic and sautรฉ until fragrant.

  4. Combine Ingredients: Add the shallots, bird’s eye chilies, shrimp paste (if using), and bay leaf to the pan. Continue to sautรฉ until the shallots begin to soften.

  5. Mix in Fish: If using ikan klotok, add the fried pieces to the pan and stir well to combine with the aromatic mixture. If using anchovies, add them at this stage.

  6. Season the Dish: Stir in the sweet soy sauce, seasoning powder (Masako or Royco), and adjust seasoning with sugar and salt to taste. Cook for a few more minutes, allowing the flavors to meld together.

  7. Serve: Remove from heat and serve hot. Enjoy this flavorful and spicy dish with steamed rice or as a side dish!
