Ikan Klotok Stir-Fried with Shallots Recipe
Ingredients:
- 24 shallots
- 2 cloves garlic
- 1 bay leaf
- 10 bird’s eye chilies (or to taste)
- 1/2 packet shrimp paste (*optional)
- 1 whole ikan klotok, cut into small pieces (or substitute with anchovies)
- 2 tablespoons sweet soy sauce
- 1 teaspoon seasoning powder (Masako or Royco)
- 3 tablespoons cooking oil

Prep the Aromatics: Slice the garlic and cut each shallot into quarters. Chop the bird’s eye chilies according to your spice preference.

Fry the Fish: Heat oil in a pan and fry the ikan klotok pieces until crispy and dry. If using anchovies, skip this step and add them later.

Combine Ingredients: Add the shallots, bird’s eye chilies, shrimp paste (if using), and bay leaf to the pan. Continue to sautรฉ until the shallots begin to soften.

Mix in Fish: If using ikan klotok, add the fried pieces to the pan and stir well to combine with the aromatic mixture. If using anchovies, add them at this stage.

Season the Dish: Stir in the sweet soy sauce, seasoning powder (Masako or Royco), and adjust seasoning with sugar and salt to taste. Cook for a few more minutes, allowing the flavors to meld together.
