Butter (Salted) 2 tablespoons

Cumin Seeds (Jeera) 1 teaspoon
Cinnamon Stick (Dalchini) 2 sticks
Cloves (Laung) 3
Black Pepper Corns 4
Coriander Seeds (Dhania) 3 tablespoons
Star Anise 2
Kashmiri Dry Red Chillies 3

Instructions

  1. Prepare the Masala:

    • Begin by roasting the whole spices for the masala. In a flat pan, dry roast cumin seeds, cinnamon sticks, cloves, black pepper corns, coriander seeds, star anise, and Kashmiri dry red chillies on low heat until they become fragrant. Keep stirring to avoid burning the spices.
    • Once the spices are roasted, remove them from the heat and set them aside to cool. After they cool down, grind the roasted spices into a fine powder using a spice grinder or pound them in a mortar and pestle.
  2. Cook the Chicken Keema:

    • Heat oil in a large pan over medium-high heat. Once the oil is hot, add chopped onions, ginger, garlic, and slit green chillies. Sauté for about 15-20 minutes until the onions soften and turn golden brown.

    • If needed, add a splash of water to keep the mixture moist and ensure the chicken cooks evenly.
  4. Simmer and Final Touches:

    • Allow the chicken to simmer for about 10-15 minutes, until the curry is bubbling gently on the surface. Stir occasionally to prevent the mixture from sticking to the bottom.
    • Once the chicken is cooked through, cook for another 5 minutes to ensure it is thoroughly done and the flavors have melded together.
