Black pepper powder 1/2 tsp
Lemon juice 1 tbsp
Fresh coriander (cilantro) 2-3 tbsp (chopped)
Salt To taste
Burger buns 15 small buns
Butter 2 tbsp

For the Masala:

Cinnamon sticks 2
Cloves 3
Black peppercorns 4
Coriander seeds 3 tbsp
Star anise 2
Dried Kashmiri red chilies 3

Instructions

  1. Prepare the Spice Masala:
    In a dry pan, toast cumin seeds, cinnamon sticks, cloves, whole black peppercorns, coriander seeds, star anise, and dried Kashmiri red chilies for about 3 to 4 minutes, until aromatic. Set aside and allow to cool. Once cooled, grind them into a fine powder using a blender or spice grinder. Set the ground masala aside.

  2. Cook the Chicken Keema:
    Heat some oil in a pan and add the chopped onions, ginger, garlic, and green chilies. SautΓ© until the onions become soft and brown. Add the freshly ground spice masala to the pan and cook for another minute to blend the flavors.

  3. Add Tomatoes and Simmer:
    Add the chopped tomatoes along with a little water. Cook for about 10 minutes until the tomatoes become soft and the oil begins to separate from the mixture.

  4. Add Yogurt and Chicken Keema:
    Stir in the yogurt and cook for 2 minutes. Then, add the minced chicken and cook for 10 to 15 minutes, stirring occasionally, until the chicken is fully cooked.

  5. Final Seasoning:
    Once the chicken is cooked, add the lemon juice, stir, and garnish with freshly chopped coriander leaves.

  6. Toast the Burger Buns:
    Heat butter in a separate pan and toast the burger buns until golden brown.

  7. Assemble the Sliders:
    Fill each toasted bun with a generous portion of the chicken keema and serve immediately.
