Instructions

Step Instructions
1 Heat a wide pan over medium heat and add 1-1/2 tablespoons of extra virgin olive oil.
2 Add the finely chopped onions, garlic, black olives, and green olives to the pan. Sauté for about a minute, just until fragrant and the flavors begin to meld together.
3 Add the boiled green moong dal to the pan, along with salt to taste. Gently mash the dal with the back of a spoon to create a coarse mixture.
4 Add the lemon zest and stir well to combine all the ingredients.
5 Turn off the heat, and transfer the mixture to a mixing bowl. Add the chopped parsley or cilantro, crushed dry red chilies, lemon juice, and the remaining olive oil.
6 Mix everything together until the flavors are evenly distributed.
7 Cut the French bread loaf into diagonal slices. Lightly toast each slice on a griddle or in the oven until just crisp. Arrange the toasted slices on a serving platter.
8 Spread a generous amount of the moong tapenade mixture onto each slice of bread.
9 Garnish with a drizzle of extra virgin olive oil and a sprinkle of crushed red chilies for added flavor and presentation.
10 Serve the Indian Style Tapenade warm, accompanied by a cup of hot Masala Chai. It’s perfect as a tea-time snack or even a light breakfast.
