Ingredients
- 450g yams, peeled and cut into 2.5 cm cubes
- 15-30 garlic cloves, finely chopped (adjust to taste)
- 750g fresh tomatoes, roughly chopped
- 5 green cardamom pods
- 1 bay leaf
- 30-50 peppercorns
- 5 cinnamon sticks
- 2 tsp cumin seeds
- 1 tsp turmeric powder
- 4 tsp chili powder (adjust to spice preference)
- 2 1/2 tsp ground coriander
- 5 tsp garam masala
- 2 tbsp yogurt
- 5 tbsp vegetable oil, divided

Prepare Ingredients:
- Peel the yams and cut them into 2.5 cm cubes.
- Finely chop the garlic cloves.
- Roughly chop the tomatoes.

Cooking the Curry:
- Heat 3 tablespoons of vegetable oil in a large pan over medium heat.
- Add the cumin seeds and cook until they start to splutter.
- Add the chopped garlic and sauté until golden brown.
- Add the green cardamom pods, bay leaf, peppercorns, cinnamon sticks, turmeric powder, chili powder, ground coriander, garam masala, and salt to taste. Cook for a few seconds until fragrant.
- Add the chopped tomatoes and cook until they soften and the oil begins to separate from the masala.

- In a separate pan, heat the remaining 2 tablespoons of vegetable oil over medium-high heat.
- Carefully add the yam cubes in batches and fry until they turn golden brown and crisp.
