Ingredients

  • 450g yams, peeled and cut into 2.5 cm cubes
  • 15-30 garlic cloves, finely chopped (adjust to taste)
  • 750g fresh tomatoes, roughly chopped
  • 5 green cardamom pods
  • 1 bay leaf
  • 30-50 peppercorns
  • 5 cinnamon sticks
  • 2 tsp cumin seeds
  • 1 tsp turmeric powder
  • 4 tsp chili powder (adjust to spice preference)
  • 2 1/2 tsp ground coriander
  • 5 tsp garam masala
  • 2 tbsp yogurt
  • 5 tbsp vegetable oil, divided

Instructions

  1. Prepare Ingredients:

    • Peel the yams and cut them into 2.5 cm cubes.
    • Finely chop the garlic cloves.
    • Roughly chop the tomatoes.
  2. Cooking the Curry:

    • Heat 3 tablespoons of vegetable oil in a large pan over medium heat.
    • Add the cumin seeds and cook until they start to splutter.
    • Add the chopped garlic and sauté until golden brown.
    • Add the green cardamom pods, bay leaf, peppercorns, cinnamon sticks, turmeric powder, chili powder, ground coriander, garam masala, and salt to taste. Cook for a few seconds until fragrant.
    • Add the chopped tomatoes and cook until they soften and the oil begins to separate from the masala.
  3. Frying the Yam:

    • In a separate pan, heat the remaining 2 tablespoons of vegetable oil over medium-high heat.
    • Carefully add the yam cubes in batches and fry until they turn golden brown and crisp.
    • Remove the fried yam cubes and drain them on paper towels to remove excess oil.
  4. Finishing the Curry:

    • Add yogurt to the tomato masala mixture and stir well to combine.
    • Continue cooking until the oil starts to separate from the masala again.
    • Pour in the water and bring the mixture to a boil.
  5. Simmering the Curry:

    • Gently add the fried yam cubes to the tomato-yogurt mixture.
    • Reduce the heat to low, cover the pan, and simmer for about 25 minutes or until the yam cubes are tender and the flavors are well combined.
