Ayam Geprek: Indonesian Crispy Fried Chicken with Spicy Garlic Sauce

Ingredients:

For the Chicken:

  • 4 pieces of chicken (drumsticks or thighs)
  • 8 cloves of garlic, finely minced
  • 4 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon chicken bouillon powder
  • 1 egg

For the Spicy Garlic Sauce:

  • 4 cloves of garlic
  • 10 small red chili peppers (cabe rawit)
  • 1 teaspoon salt
  • 1 teaspoon sugar

Instructions:

  1. Prepare the Marinade: In a bowl, combine the minced garlic, salt, black pepper, and chicken bouillon powder. Mix well until all ingredients are evenly distributed. Rub this mixture generously over the chicken pieces. Ensure the chicken is well-coated with the seasoning. Allow it to marinate for at least 30 minutes to let the flavors penetrate the meat. If time permits, marinate for longer to deepen the flavor.

  2. Prepare for Frying: In a separate bowl, beat the egg. Dip each marinated chicken piece into the beaten egg, making sure it’s fully coated.

  3. Coat the Chicken: In another bowl, mix the all-purpose flour and cornstarch. Dredge the egg-coated chicken pieces in the flour mixture, pressing lightly and turning to ensure an even coating.
