  • 1/2 tsp salt

For the spice paste:

  • 10 curly red chilies
  • 5 shallots
  • 2 cloves garlic
  • 1 piece galangal (1 inch)
  • 1/2 piece ginger (1/2 inch)
  • 1 piece turmeric (1 inch)
  • 1 tbsp coriander seeds
  • 2 candlenuts

For the additional seasoning:

  • 2 stalks lemongrass, bruised
  • 2 kaffir lime leaves
  • 1 bay leaf
  • 1 turmeric leaf
  • 2 tbsp oyster sauce
  • 2 tbsp sweet soy sauce
  • 1/2 tsp ground white pepper

Instructions:

  1. Prepare the Chicken: Start by cutting the chicken into pieces and thoroughly cleaning them. Squeeze the juice of one lime over the chicken and sprinkle with 1/2 teaspoon of salt. Let it marinate for about 10 minutes to remove any unpleasant odors and tenderize the meat.

  2. Prepare the Spice Paste: Using a mortar and pestle (preferred) or a blender, grind the curly red chilies, shallots, garlic, galangal, ginger, turmeric, coriander seeds, and candlenuts into a coarse paste. For an authentic texture, it’s better to hand-grind these spices rather than using a blender.

  3. Fry the Chicken: Heat a generous amount of oil in a pan until hot. Fry the chicken pieces until they are golden brown and fully cooked. Once done, remove them from the pan and set them aside.

  4. Cook the Spice Paste: In the same pan, use a small amount of the leftover oil to sauté the spice paste. Add the bruised lemongrass, kaffir lime leaves, bay leaf, and turmeric leaf to the pan. Cook until the spices are fragrant and well-blended.

  5. Combine and Simmer: Add the fried chicken pieces back into the pan. Pour in the oyster sauce, sweet soy sauce, and ground white pepper. Stir everything together until the chicken is evenly coated with the spice mixture.

  6. Final Touches: Allow the chicken to simmer in the sauce for a few more minutes, ensuring all the flavors are well absorbed. Once the sauce has thickened and the chicken is beautifully glazed, turn off the heat.

  7. Serve: Your Ayam Jingkrak is now ready to be served! This dish is best enjoyed with steamed rice. The vibrant spices and rich flavors make it a perfect centerpiece for any meal.
