  • 1 large onion, sliced
  • 1 tomato, sliced
  • 5 shallots (Bawang Merah)
  • 2 cloves garlic
  • A small piece of ginger
  • A small amount of shrimp paste (Terasi) – use ABC brand
  • 10 red curly chilies (Cabe Merah Keriting)
  • 5 red bird’s eye chilies (Cabe Rawit Merah)
  • Hot water, as needed
  • Salt, to taste
  • Sugar, to taste
  • Flavor enhancer (Mecin) or chicken bouillon, to taste
  • Cooking oil, as needed

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken pieces thoroughly. Rub them with lime juice and salt. Let the chicken marinate for 15 minutes to absorb the flavors.
  2. Prepare the Spice Paste:

    • In a blender, combine the shallots, garlic, red curly chilies, bird’s eye chilies, and ginger. Blend until you achieve a smooth paste.
  3. Cook the Spice Paste:

    • Heat some cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.
  4. Add Aromatics and Chicken:

    • Add the sliced onion to the pan and stir briefly. Then, add the chicken pieces, bay leaves, lemongrass, tomato, and shrimp paste. Stir and cook until the chicken starts to brown and is partially cooked.
  5. Simmer:

    • Pour hot water into the pan until the chicken is just covered. Add sugar, salt, and flavor enhancer (Mecin) or chicken bouillon to taste. Stir well and cover the pan. Allow the chicken to simmer until fully cooked and tender, about 30-40 minutes. Stir occasionally and adjust seasoning as needed.
  6. Finish with Basil:

    • Once the chicken is cooked, add the basil leaves and stir gently. Let the basil wilt into the sauce.
  7. Serve:
