Indonesian Recipe: Ayam Goreng Balado
Ingredients:
- 4 pieces of chicken (I used wings because they were leftover)
- For Fried Chicken Seasoning:
- 3 shallots
- 2 cloves of garlic
- Seasoning powder
- Water
- For Balado Sauce:
- 6 shallots
- 4 cloves of garlic
- 3 red chilies
- 3 bird’s eye chilies (more if you like it very spicy)
- Tomato
- Granulated sugar
- Salt
- MSG (optional)

Prepare the Chicken:
- Clean the chicken pieces thoroughly.

Make the Fried Chicken Seasoning:
- Grind shallots and garlic into a smooth paste. Sauté the paste with seasoning powder, then add water. Put the chicken in and let the seasoning absorb, then fry the chicken until golden brown.

Prepare the Balado Sauce:
- Grind shallots, garlic, bird’s eye chilies, red chilies, and tomato into a smooth paste. Sauté the paste until fragrant. Add scallions or basil, then add seasoning powder, salt, and sugar to taste.

Combine Chicken with Balado Sauce:
- Mix the fried chicken into the Balado sauce until evenly coated. Turn off the heat and serve.
