Spicy Balado Eggs: A Flavorful Indonesian Delight

Ingredients:

  • 6 hard-boiled eggs
  • 1 stalk of scallion
  • Blended Spice Mix:
    • 5 cloves of garlic
    • 2 shallots
    • 7 curly red chilies
    • 11 bird’s eye chilies (adjust to taste)
    • 1 medium red tomato
  • Salt, to taste
  • A splash of soy sauce
  • A pinch of seasoning (optional)
  • Cooking oil

Instructions:

  1. Prepare the Eggs:

    • Heat a generous amount of oil in a frying pan over medium heat.
    • Fry the hard-boiled eggs until their shells turn a rich brown. The frying time can be adjusted based on your preference for egg crispiness. Once done, remove the eggs from the pan and set them aside.
  2. Cook the Spice Mix:

    • In the same pan, add a bit more oil if needed, and sauté the blended spice mix (garlic, shallots, curly red chilies, bird’s eye chilies, and tomato) over medium heat until fragrant and the oil starts to separate from the mixture.
  3. Combine and Season:

    • Add the fried eggs to the pan with the spice mix. Stir gently to ensure the eggs are well-coated with the spices.
    • Season with salt, a splash of soy sauce, and a pinch of seasoning if desired. Continue to stir until the flavors are evenly distributed.
  4. Final Touches:

    • Taste and adjust seasoning as necessary.
    • Remove from heat and transfer to a serving dish.
  5. Serve:

    • Enjoy your Spicy Balado Eggs as a savory and spicy addition to your meal. They pair wonderfully with steamed rice or as a stand-alone snack.

Feel free to adjust the amount of chilies according to your heat preference, and savor this Indonesian classic that’s sure to add a kick to your culinary repertoire!
