Telor Balado: A Spicy Indonesian Egg Dish
Ingredients:
- 10 large eggs
- 1 liter water (for boiling eggs)
- 1 cup cooking oil (for frying the eggs)
- 1 cup cooking oil (for the spice mixture)
- 1 liter ice water
- 2 teaspoons granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
For the Spice Paste:

- 10 red chili peppers
- 5 red bird’s eye chilies
- 5 shallots
- 4 cloves garlic
Instructions:

Boil the Eggs:
- Place the eggs in a pot and cover them with 1 liter of water. Bring to a boil and cook for about 10 minutes.
- After boiling, remove the eggs and transfer them to a bowl filled with ice water. Let them sit for 5 minutes to cool down and make peeling easier. Once cooled, peel the eggs.

Fry the Eggs:
- Heat 1 cup of cooking oil in a pan over medium heat. Carefully add the peeled eggs and fry them until they are golden brown. Remove and drain the eggs on paper towels.

Prepare the Spice Paste:
- Blend or grind the red chili peppers, bird’s eye chilies, shallots, and garlic into a smooth paste.

Cook the Spice Mixture:
- In a separate pan, heat 1 cup of cooking oil over medium heat. Add the spice paste and cook, stirring frequently, until fragrant and the oil starts to separate from the paste.
- Add the sugar, salt, and white pepper to the spice paste, and cook for a few more minutes until the flavors are well combined.

Combine the Eggs and Spice Paste:
- Gently add the fried eggs to the spice mixture. Stir to coat the eggs thoroughly with the spice paste. Cook for an additional 5 minutes, allowing the flavors to meld together.
