Seblak Toge Telur (Indonesian Bean Sprout Stir-Fry with Egg)

Ingredients:

  • 1 packet of bean sprouts (toge)
  • 1 egg
  • 3 shallots
  • 2 cloves of garlic
  • 1 small piece of kencur (aromatic ginger root)
  • 5 bird’s eye chilies (adjust according to your spice preference)
  • Ground black pepper, to taste
  • Granulated sugar, to taste
  • Flavor enhancer (optional), to taste
  • 2 tablespoons vegetable oil
  • 1/2 cup water

Instructions:

  1. Prepare the Bean Sprouts:

    • Rinse the bean sprouts thoroughly under running water. Set them aside to drain.
  2. Make the Spice Paste:

    • In a mortar and pestle or blender, grind the shallots, garlic, kencur, and bird’s eye chilies into a smooth paste.
  3. Cook the Spices:

    • Heat the vegetable oil in a pan over medium heat. Add the ground spice paste and sauté until fragrant.
  4. Add the Bean Sprouts:

    • Add the drained bean sprouts to the pan and stir-fry until they begin to soften.
  5. Incorporate the Egg:

    • Crack the egg directly into the pan and stir it through the bean sprouts, mixing well to ensure the egg is evenly distributed.
  6. Add Water and Seasonings:

    • Pour in the water and continue to stir. Season with ground black pepper, granulated sugar, and optional flavor enhancer. Mix everything well.
  7. Simmer:

    • Allow the mixture to cook until the water has mostly evaporated and the flavors have melded together. Adjust seasoning as needed.
  8. Serve:

    • Once the bean sprouts are tender and the dish has reached your desired consistency, remove from heat. Serve hot and enjoy your homemade Seblak Toge Telur.
