Gepuk Daging Sapi Ala Yeni
Ingredients:
- 1/2 kg beef
- 1 packet of Kara coconut milk (liquid)
- 5 candlenuts
- 3 cm galangal
- 1/2 cm ginger
- 3 stalks of lemongrass (white part only)
- 5 bay leaves
- 1 tablespoon tamarind water
- Palm sugar/brown sugar to taste
- Salt to taste
- Flavor enhancer (optional)
- 1/4 teaspoon nutmeg
- 10 shallots
- 7 cloves of garlic
- Fried shallots for garnish
- Cooking oil as needed
Instructions:

Prepare the Beef:
- Cut the beef into desired pieces.
- Boil the beef in approximately 1 liter of water along with bruised galangal, bay leaves, lemongrass, 3 cloves of crushed garlic, and pepper. Simmer for about 1 hour until the beef is tender.
- Remove the beef from the broth. Set aside the broth (you will use it later).
- Pound the beef pieces using a pestle or meat mallet until slightly flattened and tenderized.

Prepare the Tamarind Water:
- Dissolve tamarind in a little water (using about 2 pieces of tamarind).

Cook the Spice Paste:
- Sauté the spice paste in a little cooking oil until fragrant and the oil separates from the paste.
- Add the reserved beef broth, the entire contents of the initial boiling pot (including the lemongrass, bay leaves, and galangal), and bring to a boil.

Combine Ingredients:
- Add the tenderized beef, salt, tamarind water, palm sugar, a little flavor enhancer (if using), and coconut milk to the boiling broth.
- Cook while stirring continuously to ensure the spices and coconut milk are well absorbed into the beef. Continue to cook until the liquid is completely reduced and the spices cling to the beef.

Fry the Beef:
- Lightly fry the beef in hot oil for a short time until it is slightly crispy, but not too long to avoid making it tough. Remove from the oil and place on a serving plate.

Garnish and Serve:
- Sprinkle fried shallots on top of the beef for garnish.
- Serve hot, ideally accompanied by sambal tolenjeng (made from bird’s eye chilies, shallots, sugar, and salt) for added flavor.
