Here’s a step-by-step guide to making this delicious recipe.

Ingredients:

  • 250 grams beef (sliced thinly)
  • For boiling the beef:
    • 6 cloves garlic
    • 2 shallots
    • 1 teaspoon coriander
    • Salt to taste
    • 2 small pieces of palm sugar
    • 1-inch piece ginger
    • Water (enough to cover the beef)
  • For the balado sauce:
    • 100 grams curly red chilies
    • 5 bird’s eye chilies (adjust to taste for spiciness)
    • 2 tablespoons tamarind juice
    • 5 shallots
    • 1 teaspoon granulated sugar
    • Salt to taste
    • Cooking oil (for frying and sautéing)

Instructions:

  1. Prepare the Beef:

    • Thoroughly wash the beef slices and set aside.
    • In a pot, bring water to a boil. Add the finely chopped garlic, shallots, coriander, salt, palm sugar, and ginger. Stir to combine.
    • Add the beef slices to the pot. Cook until the water is almost evaporated and the beef is tender. This process helps infuse the beef with the aromatic spices.
  2. Fry the Beef:

    • Remove the beef from the pot and let it cool slightly. Once cooled, slice it further if necessary.
    • Heat oil in a frying pan over medium heat. Fry the beef slices until they become crispy and golden brown. Remove from the oil and set aside.
  3. Prepare the Balado Sauce:

    • In a blender or food processor, combine the curly red chilies, bird’s eye chilies, shallots, and a pinch of salt. Blend until smooth.
    • Heat oil in a pan over medium heat. Pour in the blended mixture and sauté until fragrant and the oil begins to separate from the sauce.
    • Add the tamarind juice and granulated sugar. Stir well and cook for a few minutes to let the flavors meld together.
  4. Combine and Serve:

    • Add the fried beef slices to the pan with the balado sauce. Stir to coat the beef evenly with the sauce.
    • Adjust seasoning with salt and additional sugar if needed. Continue cooking until the sauce thickens and coats the beef, allowing the flavors to meld together.
    • Remove from heat and serve hot with steamed rice.
