Gulai Tunjang / Kaki Sapi: A Traditional Indonesian Delicacy

Ingredients:

  • 1/2 kg beef leg (kaki sapi), cut into 6 pieces
  • 1 coconut, grated
  • Water, as needed
  • 1 teaspoon salt
  • 1 beef-flavored bouillon block (maigi)

Ground Spices:

  • 8 cloves garlic
  • 10 shallots
  • 10 red curly chilies
  • 1 inch turmeric
  • 1 inch ginger
  • 2 inches galangal
  • 1 tablespoon coriander seeds
  • 1 nutmeg seed
  • 1 candlenut
  • 1/2 nutmeg
  • 3 cloves
  • 1 star anise
  • 3 pieces of star anise

Herbs:

  • 1 bay leaf
  • 1 turmeric leaf
  • 3 kaffir lime leaves
  • 2 stalks lemongrass

Instructions:

  1. Preparation:

    • Thoroughly wash the beef leg pieces (kaki sapi) and set aside.
  2. Pre-cooking the Beef:

    • In a pressure cooker, cook the beef leg with 4 bay leaves and grated coconut water for about 1 hour. For a softer texture that appeals to children and your family, cook for 1.5 hours until tender.
  3. Blending Spices:

    • While the beef is cooking, blend all the ground spices into a smooth paste. Use a little water to help blend if necessary.
  4. Extracting Coconut Milk:

    • Squeeze the grated coconut to extract the milk, using three rounds of squeezing to get thick coconut milk.
  5. Cooking the Gulai:

    • In a large pot, bring the coconut milk and the ground spice paste to a boil over low heat. Add the bay leaf, turmeric leaf, kaffir lime leaves, and lemongrass stalks to the pot.
  6. Adding the Beef:

    • Once the coconut milk is boiling, add the pre-cooked beef leg pieces to the pot. Let it simmer over low heat, stirring occasionally, until the sauce thickens and the flavors meld together.
  7. Seasoning:

    • When the sauce starts to separate and the oil floats on top, add salt and the beef bouillon block. Adjust the seasoning to taste.
  8. Finishing Touch:

    • Remove from heat and serve hot. Your Gulai Tunjang is ready to enjoy with steamed rice or warm bread.
