Spicy Indonesian Beef Liver and Potato Delight

Sambal Goreng Ati Sapi Recipe

Ingredients:

  • 1/4 kg beef liver
  • 1/4 kg potatoes
  • 1/2 cup ground red chili (you can use pre-ground chili paste or grind fresh red chilies)
  • 5 cloves shallots
  • 2 cloves garlic
  • 3 candlenuts
  • 1 stalk lemongrass
  • 3 cm galangal
  • 3 cm ginger
  • 2 bay leaves
  • 3 kaffir lime leaves
  • 1 small packet coconut milk (such as Kara brand)
  • Salt, to taste
  • Pepper, to taste
  • 1/2 teaspoon granulated sugar
  • Flavor enhancer, to taste
  • Cooking oil, as needed

Instructions:

  1. Prepare the Beef Liver:

    • Begin by boiling the beef liver until tender. Drain the liver and cut it into cubes. Quickly fry the liver in hot oil just to give it a light crispiness. Set aside.
  2. Prepare the Potatoes:

    • Peel the potatoes and cut them into small cubes. Fry the potato cubes in hot oil until they are golden and cooked through. Remove from the oil and set aside.
  3. Prepare the Spice Paste:

    • In a blender, combine the shallots, garlic, and candlenuts, and blend into a smooth paste.
  4. Cook the Spices:

    • Heat some oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant.
    • Add the lemongrass, galangal, bay leaves, and kaffir lime leaves to the pan. Continue to stir and cook until the spices are well integrated and aromatic.
  5. Add Chili and Coconut Milk:

    • Stir in the ground red chili (or pre-ground chili paste) and cook for a few more minutes.
    • Pour in the coconut milk and bring to a gentle boil. Let it simmer until the oil starts to separate from the coconut milk.
  6. Combine Ingredients:

    • Add the fried beef liver and potatoes into the pan. Stir well to ensure that the liver and potatoes are coated with the spiced coconut milk mixture.
    • Let it cook for a few minutes, allowing the flavors to meld and the ingredients to absorb the spices.
  7. Season and Serve:

    • Season with salt, pepper, granulated sugar, and flavor enhancer to taste. Adjust the seasoning as needed.
    • Remove from heat once the liver and potatoes are well-coated with the sauce and the flavors have fully developed.
  8. Serving Suggestion:

    • Serve the Sambal Goreng Ati Sapi hot with steamed rice or as part of a larger Indonesian meal spread.

Note:

  • If you prefer, you can use whole red chilies and blend them with the other spices. Adjust the amount of chili to suit your taste preference.
