Spicy Indonesian Beef Liver and Potato Stir-Fry

Sambal Goreng Hati Sapi Kentang

Ingredients:

  • 250 grams beef liver, cut into cubes
  • 250 grams potatoes, peeled and diced
  • 1 stalk lemongrass, bruised
  • 3 kaffir lime leaves
  • 2 pieces of galangal (about 2 inches), bruised
  • 1 tablespoon tamarind water
  • 1 tablespoon mushroom or beef bouillon powder
  • 1 teaspoon finely ground white pepper
  • Salt and sugar to taste
  • 30 ml thick coconut milk
  • Water, as needed
  • Cooking oil, as needed

Ground Spices:

  • 7 dried red chilies (mild version) or 150 grams fresh red chilies (spicy version)
  • 7 shallots
  • 5 garlic cloves
  • 3 roasted candlenuts
  • 1 teaspoon roasted coriander seeds
  • Fried shallots, for garnish

Instructions:

  1. Prepare Ingredients and Spices:

    • Gather all the ingredients and spices for easy access.
  2. Cook the Beef Liver:

    • Boil the beef liver in a pot of boiling water with 2 bay leaves for about 10 minutes, or until cooked through.
    • Remove from the pot, let cool slightly, and cut into cubes.
  3. Fry the Potatoes:

    • Heat oil in a pan and fry the diced potatoes until golden and cooked through. Remove and set aside.
  4. Fry the Beef Liver:

    • In the same pan, briefly fry the beef liver cubes for about 1 minute. Avoid overcooking to prevent them from becoming dry. Remove from the pan and set aside.
  5. Cook the Spices:

    • Heat a little oil in a pan. Sauté the ground spices, lemongrass, kaffir lime leaves, and galangal until fragrant and cooked.
  6. Combine Ingredients:

    • Add water and tamarind water to the spice mixture, stirring well. Bring to a boil.
    • Stir in the bouillon powder, white pepper, salt, and sugar. Mix thoroughly.
  7. Add Beef Liver:

    • Incorporate the beef liver into the pan, stirring to combine. Allow the mixture to cook until the liquid reduces slightly and the flavors meld. Taste and adjust seasoning if necessary.
  8. Finish the Dish:

    • Add the fried potatoes to the pan, mixing gently to combine. Cook for a few more minutes, ensuring the potatoes are well-coated with the sauce.
  9. Serve:

    • Transfer the dish to a serving platter and garnish with fried shallots. Enjoy warm.
