Ingredients

Main Ingredients:

  • 300 grams of beef liver

  • 1 small packet of Kara coconut milk (65 ml)

Ingredients for Boiling Beef Liver:

  • 2 bay leaves
  • 1 stalk of lemongrass, bruised

Spice Paste:

  • 5 red chilies, seeds removed
  • 8 shallots
  • 5 cloves of garlic
  • 1 tomato
  • 1 teaspoon of coriander seeds
  • 3 candlenuts

Additional Ingredients:

  • 2 bay leaves
  • 1 stalk of lemongrass, bruised
  • 2 slices of galangal, bruised

Instructions

  1. Prepare the Beef Liver:

    • Boil the beef liver with bay leaves and bruised lemongrass until tender. Once cooked, cut the liver into small cubes and briefly fry them until slightly crispy. Set aside.
  2. Prepare the Potatoes:

    • Fry the diced potatoes until golden brown and crispy. Drain and set aside.
  3. Make the Spice Paste:

    • Blend the red chilies, shallots, garlic, tomato, coriander seeds, and candlenuts into a smooth paste.
  4. Cook the Dish:

    • Heat some oil in a pan and sauté the spice paste along with additional bay leaves, bruised lemongrass, and galangal until fragrant.
    • Add the coconut milk and water to the pan, stirring well to combine.
    • Add the fried potatoes and beef liver to the pan. Season with sugar and salt to taste. If using, add mushroom broth for extra umami.
    • Cook until the sauce thickens and reduces, ensuring the flavors are well absorbed by the potatoes and liver.
  5. Serve:
