Spicy Indonesian Beef Liver and Potato Stir-Fry

Sambal Goreng Kentang Ati Sapi Pedas: A Fiery Delight

Ingredients:

  • 3 medium potatoes, diced
  • 250 grams of beef liver, diced
  • Seasoning to taste
  • Palm sugar, to taste

For the Spice Paste:

  • 15 red bird’s eye chilies
  • 4 shallots
  • 3 cloves of garlic
  • 3 candlenuts
  • 1 teaspoon of coriander seeds
  • Salt to taste

Instructions:

  1. Begin by dicing the potatoes into uniform cubes. Heat oil in a frying pan and fry the diced potatoes until they are half-cooked and golden brown. Remove from the pan and drain on paper towels to remove excess oil.

  2. Next, prepare the beef liver. Boil the liver in water until fully cooked. Once cooked, drain and cut it into cubes similar in size to the potatoes.

  3. For the spice paste, blend together the red bird’s eye chilies, shallots, garlic, candlenuts, and coriander seeds into a smooth paste.

  4. In a pan, heat a little oil over medium heat. Add the spice paste and sauté until it becomes fragrant and the oil starts to separate from the paste. Add a small amount of palm sugar to balance the flavors.

  5. Add the pre-fried potatoes and boiled beef liver to the pan with the spice paste. Stir well to ensure the potatoes and liver are evenly coated with the spice mixture.

  6. Season the dish with salt and additional seasoning to taste. Stir and cook for a few more minutes, allowing the flavors to meld together.

  7. Taste and adjust the seasoning as needed. Once everything is well-combined and heated through, your Sambal Goreng Kentang Ati Sapi Pedas is ready to serve.
