Sambel Ati Sapi: A Flavorful Indonesian Beef Liver Delight

For the Spice Paste (Bumbu Halus):

  • 10 red chilies (cabe merah), adjust according to heat preference
  • 15 bird’s eye chilies (cabe rawit), adjust according to heat preference
  • 3 cloves garlic (bawang putih)
  • 4 shallots (bawang merah)
  • 2 candlenuts (kemiri)

Instructions:

  1. Prepare the Beef Liver:
    Begin by boiling the beef liver until it is tender. Once cooked, drain and cut the liver into bite-sized cubes. Set aside.

  2. Fry the Potatoes:
    Heat oil in a frying pan and fry the potato cubes until they are golden brown and crispy. Remove from oil and drain on paper towels.

  3. Make the Spice Paste:
    While the potatoes are frying, prepare the spice paste. Blend or grind the red chilies, bird’s eye chilies, garlic, shallots, and candlenuts into a smooth paste.

  4. Sauté the Spice Paste:
    In a large pan, heat a generous amount of oil. Add the galangal and sauté until it releases its aroma. Add the spice paste and continue to cook until the mixture is fragrant and the oil starts to separate from the paste.

  5. Combine Ingredients:
    Add the beef liver to the pan and stir to coat it in the spice paste. Pour in the coconut milk and mix well. If you prefer a lighter dish, you can substitute the coconut milk with water.

  6. Add Potatoes and Pete:
