Spicy Stir-Fried Beef Ribs (Oseng Oseng Iga Sapi Pedas)

Ingredients:

  • 250 grams beef ribs, boiled until tender
  • 1 potato, peeled and diced
  • 5 cloves garlic, thinly sliced
  • 5 shallots, thinly sliced
  • 1/2 onion, thinly sliced
  • 15 bird’s eye chilies, sliced
  • Ground pepper and coriander, to taste
  • Salt and sugar, to taste
  • Sweet soy sauce, to taste

Instructions:

  1. Prepare the Ingredients:

    • Begin by peeling the potato and cutting it into small cubes.
    • Slice the garlic, shallots, and onion thinly to ensure they cook evenly and release their flavors effectively.
    • Slice the bird’s eye chilies. Adjust the amount according to your preferred level of spiciness.
  2. Sauté the Aromatics:

    • In a pan, heat a small amount of oil over medium heat.
    • Add the sliced garlic, shallots, and onion. Sauté until they become fragrant and the onion turns translucent.
  3. Incorporate the Beef Ribs:

    • Add a small amount of water to the pan, just enough to create a bit of steam.
    • Introduce the boiled beef ribs into the pan, mixing them with the sautéed aromatics.
  4. Season and Simmer:

    • Add sweet soy sauce, salt, sugar, ground pepper, and ground coriander to the pan. Stir well to ensure the ribs are evenly coated with the seasoning.
    • Continue to cook the mixture until the beef ribs become tender and fully absorb the flavors. This step may take a few minutes, so be patient to achieve the best taste.
  5. Add the Potatoes:

    • Once the beef ribs are tender, add the diced potatoes to the pan.
    • Continue cooking until the potatoes are cooked through and the liquid has reduced significantly, resulting in a slightly thickened sauce.
  6. Final Touches and Serving:

    • Taste the dish and adjust the seasoning if necessary. The flavors should be balanced with a hint of sweetness from the soy sauce, spiciness from the chilies, and a savory depth from the aromatics and spices.
    • Serve the spicy stir-fried beef ribs hot, garnished with additional slices of bird’s eye chilies if desired.

Enjoy this flavorful and aromatic dish as a main course, perfect for warming up any meal with its rich, spicy profile.
