Oseng Tetelan Sapi: A Rich and Flavorful Indonesian Beef Dish

Ingredients:

  • 1/4 kg beef rib bones (tetelan sapi)
  • 5 large green chilies (cabe hijau besar)
  • 600 ml water (adjust as needed)
  • Palm sugar (gula jawa), to taste
  • Seasoning (penyedap rasa), to taste

For the spice paste:

  • 5 shallots (bawang merah)
  • 3 garlic cloves (bawang putih)
  • 15 small red chilies (cabai rawit merah)
  • 3 large red chilies (cabai merah besar)
  • Salt, to taste

Instructions:

  1. Prepare the Spice Paste:
Begin by blending the shallots, garlic, small red chilies, and large red chilies into a smooth paste. This will form the flavorful base of your dish.

  2. Sauté the Spice Paste:
Heat a little oil in a pan over medium heat. Add the spice paste and sauté until it becomes aromatic and slightly golden. This step releases the essential oils and flavors from the spices.

  3. Add Palm Sugar:
Stir in the palm sugar and mix well with the sautéed spice paste. This will add a touch of sweetness that balances the heat from the chilies.

  4. Cook the Beef:
Add the beef rib bones to the pan. Stir to coat the meat evenly with the spice paste. Cook for about 5 minutes, allowing the beef to sear and absorb the flavors.

  5. Simmer:
Pour in the water, ensuring that the beef is just covered. If needed, adjust the amount of water. Bring to a boil, then reduce the heat and cover the pan. Let it simmer until the liquid is reduced by half and the beef is tender. This should take around 45 minutes to 1 hour.

  6. Season:
Once the beef is tender and the liquid has reduced, add seasoning to taste. Adjust the sweetness and saltiness according to your preference.

  7. Final Touches:
Allow the remaining liquid to absorb into the beef, creating a rich and flavorful sauce. Once the dish has reached your desired consistency, remove from heat.

  8. Serve:
Transfer the Oseng Tetelan Sapi to a serving dish. Enjoy this flavorful Indonesian beef dish with steamed rice or as a hearty main course.

Feel free to adjust the spice levels and sweetness according to your taste preferences. This dish offers a delightful blend of savory, spicy, and sweet notes, making it a comforting addition to any meal.
