Oseng Mercon Tetelan Sapi: A Flavorful Indonesian Beef Dish

Ingredients:

  • 250 grams beef riblets (can be substituted with regular beef)
  • 5 bird’s eye chilies
  • 7 red curly chilies
  • 4 cloves shallots
  • 4 cloves garlic
  • Palm sugar or brown sugar to taste
  • 1 tablespoon sweet soy sauce
  • Salt to taste
  • Ground pepper to taste
  • Cooking oil for sautéing
  • Water as needed
  • Thinly sliced kaffir lime leaves (optional)

Instructions:

  1. Prepare the Beef:

    • Thoroughly clean the beef riblets and cut them into bite-sized pieces. Set aside.
  2. Blend the Spice Mix:

    • Coarsely grind the shallots, garlic, bird’s eye chilies, and red curly chilies together to create a spice paste. Set aside.
  3. Cook the Beef:

    • Heat a sufficient amount of cooking oil in a pan over medium heat. Add the ground spice paste and sauté until fragrant.
  4. Add the Beef:

    • Add the beef riblets to the pan and stir for a few moments until they are well-coated with the spice paste.
  5. Season and Simmer:

    • Pour in enough water to cover the beef. Stir in the palm sugar, sweet soy sauce, salt, and ground pepper. Mix well.
  6. Simmer and Adjust:

    • Cover the pan and let it simmer for a while. Stir occasionally to ensure the beef is evenly cooked and the flavors are well combined. Adjust seasoning to taste.
  7. Finish and Serve:

    • Once the liquid has reduced and the beef is tender, add the thinly sliced kaffir lime leaves if using. Stir well and cook until the sauce has thickened. Remove from heat.
  8. Serve:

    • Transfer the Oseng Mercon Tetelan Sapi to a serving dish and enjoy it hot with steamed rice.
