Tongseng Tetelan Sapi: A Savory Indonesian Beef Stew

Ingredients:

  • 200 grams beef ribs or shank (tetelan sapi)
  • 65 ml coconut milk (Kara brand), diluted with water
  • 500 ml water
  • 3 leaves of cabbage (from 1/4 cabbage)
  • 2 ripe tomatoes
  • 3 kaffir lime leaves
  • 1 bay leaf
  • 1 clove
  • 2 small sticks of cinnamon
  • 2 stalks of lemongrass
  • 5 red chili peppers (rawit)
  • 2 segments of galangal
  • 2 tablespoons sweet soy sauce
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons sugar
  • A pinch of beef-flavored seasoning (Royco)
  • 5 tablespoons cooking oil for sautéing

For the Spice Paste:

  • 6 shallots
  • 4 cloves garlic
  • 2 candlenuts
  • 1 segment of turmeric
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon coriander powder
  • 3 red chili peppers (rawit)

For Garnish:

  • 2 stalks of green onions, sliced (optional)
  • Toasted shallots

Instructions:

  1. Prepare the Beef:

    • Rinse the beef ribs or shank briefly, then cut into bite-sized pieces.
  2. Make the Spice Paste:

    • Using a mortar and pestle or a food processor, grind the shallots, garlic, candlenuts, turmeric, black pepper, coriander powder, and red chili peppers into a smooth paste.
  3. Sauté the Spices:

    • Heat the cooking oil in a large pot over medium heat. Add the spice paste along with the kaffir lime leaves, bay leaf, clove, cinnamon sticks, lemongrass, red chili peppers, and galangal. Sauté until fragrant and the color of the paste changes.
  4. Cook the Beef:

    • Add the beef pieces to the pot, stirring until the meat is browned on all sides.
  5. Add Liquids and Seasonings:

    • Pour in the diluted coconut milk and water. Stir well, then add the red chili peppers and sweet soy sauce. Bring to a simmer.
  6. Simmer the Stew:

    • Cook until the beef becomes tender and the sauce thickens. Season with salt, sugar, and beef-flavored seasoning. Adjust the taste according to your preference.
  7. Finish with Vegetables:

    • When the beef is tender, add the cabbage and tomatoes. Cook for a few more minutes until the vegetables are tender.
  8. Serve:

    • Ladle the Tongseng Tetelan Sapi into bowls. Garnish with sliced green onions and toasted shallots if desired. Serve hot and enjoy!

  • For an added touch of flavor, you can adjust the level of spiciness by adding more or fewer red chili peppers.
