Indonesian Braised Beef Ribs with Green Chilies and Andaliman

Ingredients:

  • 1 kg beef ribs
  • 1 large onion
  • 3 cloves garlic
  • 10 shallots
  • 100 grams green chilies
  • 1 green tomato
  • Salt and sugar to taste
  • Cooking oil

Instructions:

  1. Prepare the Beef Ribs: Clean the beef ribs thoroughly. Place them in a pressure cooker and cook until tender. Once cooked, heat oil in a pan and fry the ribs until they develop a crispy, golden exterior. Be cautious of hot oil splashes and turn the ribs occasionally to ensure even cooking.

  2. Prepare the Spices: Slice the onion and green tomato. In a mortar and pestle, coarsely grind the shallots, garlic, Andaliman (a special Indonesian spice), and green chilies to create a rough paste.

  3. Cook the Aromatics: Heat a little oil in a pan. Sauté the sliced onion until it becomes slightly translucent. Add the coarsely ground spice paste and cook until fragrant. Incorporate the sliced green tomato into the mixture. Season with salt and sugar, adjusting the seasoning to your taste.

  4. Assemble and Serve: Arrange the crispy beef ribs on a serving plate. Pour the green chili sauce over the ribs. Serve immediately for a delightful and spicy Indonesian meal.

Enjoy this flavorful dish that combines tender beef ribs with a spicy and aromatic green chili sauce, perfect for a hearty meal with an Indonesian twist.
