Ragi, also known as Serundeng, is a traditional Indonesian dish made with beef and flavored with aromatic spices, fresh coconut, and a blend of seasonings. This recipe for Ragi/Serundeng Daging Sapi combines succulent beef with a rich, spiced coconut coating to create a flavorful and hearty meal. Here’s how to make it:

Ingredients:

  • 500 grams beef (daging sapi)
  • 2 young coconuts (Kelapa muda)
  • Bay leaves (Daun Salam)
  • Galangal (Lengkuas)
  • Papaya leaves (Daun pepaya)
  • Spice Blend (Bumbu Halus):
    • 1 tablespoon coriander seeds (Ketumbar)
    • 8 cloves garlic (Bawang putih)
    • 4 candlenuts (Kemiri)
  • Palm sugar (Gula Jawa), to taste
  • Granulated sugar (Gula pasir), to taste
  • Salt (Garam), to taste
  • Flavor enhancer (Penyedap rasa), to taste
  • Tamarind (Asam Jawa), to taste

Steps:

  1. Prepare the Beef:

    • Wrap the beef pieces in papaya leaves and let them marinate for a while. This helps tenderize the meat.
    • After marinating, cut the beef into bite-sized pieces.
  2. Make the Spice Blend:

    • Toast the coriander seeds in a dry pan until fragrant, then grind them into a fine powder.
    • Blend the garlic and candlenuts with the ground coriander until you get a smooth paste. Set this aside.
  3. Combine Ingredients:

  5. Season to Taste:

    • Add palm sugar, granulated sugar, salt, and flavor enhancer according to your taste. Adjust the balance of sweetness and saltiness to your preference.
    • Add tamarind as needed to achieve the desired tanginess.
  6. Serve:

    • Once the mixture is dry and the beef is fully cooked, remove from heat and transfer to a serving dish.
